Actually it's quite confusing what Neo meant in ep 10 by saying that it "could be a bit confusing". Whether he talked about the first 3 episodes of their drama (by Jan 23 only 6 episodes of the show had aired and that included only 4 episodes of their story) or whether he meant that having time travel in first 2-3 episodes could be confusing for viewers, it's rather hard to tell, or the English translation is not accurate enough. I was hoping VIKI would release their own subs for ep10, some parts required to be revised but got copied as they were, unfortunately.
Like I said above they didn't change the story in the course of filming. My conclusion is that what Neo tried to explain is that as they wanted to have a happy ending, they needed a twist in their sad (from the start) story to make it happen.
With the concept of erasing memories it was possible for them to have flashback scenes to go through memories/past events but then they couldn't just turn it back ("go back in time"). Erasing one's memories is sth definitive and from a plot perspective difficult to undo so in order to have a happy ending they needed sth that would trigger their memories. The scene at the bridal shop is brilliant, it's a crucial scene I think that works as the connecting point.
About Neo's initial idea based on time travel my guess is that it was not enough precise to turn it into an actual script or just too intricate for the show to film it in the given time schedule (could be in the end what he meant by "could be confusing"). Probably something more suitable for a drama rather than for a variety show. As for Chaoyue I don't think she really cared, the whole concept was Neo's proposal from the beginning and I'm not even sure whether he managed to explain it well enough for her to understand it.

The drama material in ep 3 (piano room/library) was filmed on Mon Dec 7th, in the next couple of days episodes 4-5 were filmed (there are photos documenting this) + the OST song was recorded at that time (which was all finished by Dec 11 when Neo had the flight to Guangzhou), further drama material from ep 6 was filmed on Dec 31 in Ningbo (there are also raw photos available posted on that day).
Honestly, most of their script must have been already written and finished before Dec 6th (when Neo and Chao Yue met on the campus that day), it's logistics and nobody will have the whole film crew on alert, the venues arranged, all equipment transported and people gathered on the set ready to shoot if they don't know what they want to film, let's not be so naive... Ep 2 of the show when the other two couples presented first parts of their dramas aired on 2020-12-26, Neo and Chao Yue's drama material was not included, but it was already filmed long ago at that time, and until Dec 31 they didn't meet again because Neo was staying from Dec 11 to Dec 30 in Guangzhou filming for "Our Times", and ep. 6 (filmed on New Year's Eve) aired on 2021-01-23. So they had the drama material much in advance I'd say, it's just deliberate editing from the variety show, how typical....

Actually Neo was still 18 in the show. He turned 19 in August 2016, and the show was filmed in parts from May until around end of July 2016. He didn't have a driving licence yet at that time, so only the other two guys could drive with the kids.
