I enjoy anime, games, music, webcomics and webnovels in addition to dramas, and I tend to drift in focus between my hobbies rather than consuming all of them at once, so there are plenty of iconic shows I'm not caught up on ^^"
I like action, comedy, romance, mystery, crime, supernatural, isekai, hunter, quick transmigration and fantasy. As a sapphic myself, I also have an affinity for yuri/shoujo-ai/baihe, aka GL.

In terms of regional content;
From Japan I mostly only watch anime, although I have seen a handful of live action dramas such as Boku no Ita Jikan, and own a modest collection of manga and light novels. I'm also a fan of Chanmina.
From Korea is where I've watched the most dramas by far, although it's been quite a while since I was watching them with any frequency, and I got into kpop when Blackpink first debuted and BTS released Wings. The artists I like are too many to count, but some classic names include IU, Taeyeon, Akmu, Sunmi, G-IDLE and Loona, while more recent ones include Jiae and NMIXX. I've also read quite a few webcomics and novels, such as the obvious Solo Levelling and Lookism (don't ask it's been years since I caught up), but also the hilarious Dungeon Reset and the sugar sweet Dallae.
From China, I've actually mostly only read baihe web novels, but I've watched a fair few short/vertical dramas with ridiculous clickbait titles to pass the time, mostly face-slapping comedies, but the only one whose title I recall is Girl! You Have to Be Mine, which as far as I can tell, still isn't registered on MDL, but is a surprisingly (implicitly) spicy GL, which is rare for China. There was also The Nine Year Old Detective, which was decent enough to warrant a sequel, something I feel is fairy rare for the medium - I mean it had an actually good child actor, Cui Yusen (崔煜森), in the lead, which is hard to find in a full budget movie - and the actress playing the protagonist's older sister, Wei Jia, seems to have an eye for scripts because she also starred in a genuinely cinematic murder mystery that AI tells me is called Perfect Evidence / The Silent Evidence, but I can't for the life of me seem to find again. I'm also a fan of Lui Yu Lu, although I don't believe any of the vertical dramas that I know her for are listed on here either - she plays a great villainess style anti-hero though. I'm not at all familiar with cpop, but I am a fan of Lexie Lu, I swear the woman hasn't released a bad album. I guess there's also Hoyoverse games if you want to count them.
From Thailand, my consumed content is pretty starkly divided between GL series on one side, and action and paranormal movies on the other, such as Ong Bak or Rider (which is ironically the first of Freen's works I ever saw). I'm still getting into Thai content and trying to familiarise myself with the language, but I want to get into reading Thai GL and listen to more tpop in the near future. So far the most notable Thai music I've liked that wasn't a GL OST is Samli Samruay by Baimint, which is an absolute bop I can't stop giggling over, but also is a tongue twister with great enunciation/articulation which as someone trying to learn the language I genuinely could not ask for more, and yet here Baimint is handing out innuendos about grannies free of charge.
