1. The watch has nothing to do with the kill switch, The kill switch is inside his body like some kind of bomb. Taking the watch of won't do anything. 2. The watch So Bong gave to human NS was a different watch (i guess she has a spare one in case one dies) 3. No one know's what happened in that one year and the writer obviously wanted us to use our fantasy to complete the plot and answer the question if he was slowly turning to human, or not. 4. Of course David made him all by himself since he is a man which loves NS III as his own son, I doubt he would let anyone touch him.

Nam Shin 3 saves the human but he gets shot as the Kill Switch is about to set in. His body is too weak to fight so he gets shot. Then it's a skip to one year or one month later and Yeong Hoon is the new CEO and human Shin decided to travel a bit. So Bong is still grieving over the loss of Shin 3 and she goes to the beach with Mai Bo. But then human Shin appears and makes joke again and she cries and turns away but then she sees Nam Shin 3. They hug, kiss and everything is observed by smiling Yong Hoon, David and human Nam Shin. The last scene is how Shin 3 and So Bong are hugging and suddenly a tear drops out of Shin 3's eye.....
Just realized the coat NS3 is wearing in next episode's teaser is the same as the one in the kissing scene bts…
NOOOOOOOO T.T Guys today i woke up CRYING cause I had a dream that Nam Shin3 had to go somewhere (idk where) but he came back 10 years later and quietly observed how So Bong lives her life without him....I swear I woke up crying.

The script writer gave us kinda open ending about how NS III is evolving :)
