"Cuts out the drag and bloat" - well, those are our hopes and dreams - let's hope any screenwriters that KBS hires don't use the shortened duration as a reason to cram every single dislikeable thing ever conceived instead of focusing on the actual good stuff in those 30 episodes!

The only concrete things we know as of this moment is Shim Yi Young(last appeared in the "Escape of the Seven" series + it's sequel) is a part of the main cast and the scriptwriter(only known as "Seojeong") has worked with her in a previous daily, "My Wonderful Life"(which is also said scriptwriter's debut work).

I get that it's pretty frustrating they reduced the episodes, but this change was done at the request of the screenwriter. She's only done mini-series, so I think 50 episodes is too much for her, I presume she doesn't have enough fluff/filler to stretch out the number of episodes to 50 without leaving the majority of the viewers frustrated, hence the change. Future KBS weekend dramas will also remain shorter after this one is completed, to 30 episodes.
(Some people who only care for the main casts usually just fast forward the scenes that don't contain them/scenes that contain very annoying characters anyways. However, a usual majority usually sits through the suffering that these side characters cause on-screen. I imagine the overall change in the number of episodes is because many are tired of the same 50 episode format, especially when it's the same usual snoozefest of letting the side characters needlessly run rampant and not letting the main characters do as they like, usually because of said side characters)
If you're a mega fan of Kim Jung Hyun, Geum Sae Rok, or Choi Tae Hoon, consider checking it out after this one finishes. Or check it out even if you aren't a mega fan of either of the three, as this will be the first KBS family weekend drama with a noticably shorter duration(went from 50 to 36 episodes).

I hope they don't think of trying to cast him or the other one(unfortunately the latter has range unlike the typecasted rat, but both have done reprehensible, unforgivable things and I'd rather not see even a speck of mention about the possiblity of either appearing).
I saw Yoon Mira(72 year old veteran actress)'s cameo appearance in episode 21. Her character's name is So Rak-Soon. I notice she isn't credited for her appearance here which is why I'm bringing it up here.
The difference between her character here and all the nasty piece of work characters in her more recent appearances is like night and day lol

Regarding your last sentence. I think it's very likely the storyline's going to shift towards Woori's past since they're wrapping up the conflict between Suji and Sunyoung. If there weren't any signs those past 60-some episodes, there will most likely be in the upcoming episodes.
