She's not really time traveling, but rather entering parallel timelines. So she's not /really/ affecting her past in the OG timeline, which is why nothing changes in the future. Each time she hops timelines, it's a specific isolated timeline. None of the timelines affect each other, as you can see with how the relationships shake out a little differently each time (especially apparent with Zhan Yu). She's able to travel to these specific moments not only because they are things she missed out on, but moreso because they were moments that Zhang Wan Sen regretted. The moments where he tried to interact with her but never could in the OG timeline. Watching the fireworks together, taking their graduation photo together, doing that rabbit dance thing (what the students were doing on the field at the beginning of the sweetest timeline), taking the college exam together, riding bikes together, seeing the first snow (!!) and becoming adults together(!!!). That's also why she gets thrown back to reality when either of them says "I like you" - being unable to express his feelings was Zhang Wan Sen's ultimate regret (scriptwriter is a total sadist for that one btw omg).
Anyhow, no one ever really says he definitely died in the OG timeline. Gao Ge tells Lin Bei Xing that his parents moved out overnight. If he had really died that day, his parents wouldn't have been able to dip out immediately like that (lots of things to deal with when someone dies :( ). It's more likely that they had to go somewhere else for him to get the best treatment for his injuries. If either Gao Ge or Mai Zi knew more, it kinda makes sense they'd be somewhat hesitant to tell her. They don't know her at all, but they know exactly how far Zhang Wan Sen went for her (well Mai Zi does at least). It'd be reasonable for them to be cagey about what they really knew.
My tinfoil hat theory is that Zhang Wan Sen was also able to hop into the sweet timeline earlier than Lin Bei Xing. Their schoolmates make multiple mentions of how good he is at guessing exam questions and the speech he gave during the competition was incredibly accurate to the future. He verbally expresses his feelings this time which ends that timeline, sending them both back. But because he remembers this timeline, he is able to boldly approach her when they are both adults, during the first snow :'''')

I thought it was a fitting ending too. While a small part of me wanted a really conclusive, very happy ending to make up for all the heart abuse this drama does, ultimately I really feel that this some what evil ending was absolutely perfect. Especially with that OST track playing. Perfect :'')

I was really looking forward to this one too but I totally agree with all your points. I had the same reaction to the set lol - it really sticks out. Given the title and mentions of antiques/cultural artifacts, I kind of expected a certain kind of... lived-in atmosphere. But these sets are just oddly sterile looking.
