I guess they had to give Baron Chen his sweet ending and love to reward his scenery chewing throughout the drama. So Mei Lin, and Jinghe for that matter, couldn't deliver the fatal stab or slash. And they had to leave her out the final battle otherwise the CP would have died there. If Mei Lin killed the CP then she could have still gone back with the Prince Heir as the price for her antidote. Had to have screen time with the eye candy.

Writers second guessing the censors who may not approve of an assassin becoming the Empress and his sole love at that?
I prefer that they went back to the village with Wei and Jia.

Perhaps you might check out My Bargain Queen. (2021) It's the only other drama of hers that I have watched. Enjoyable but I was just starting out in Cdramas then.

Yue Qin put his life on the line by getting the fake Priestess to declare that the Moon Kunlun was in Yan. He took advantage of the fact that Jinghe could not guarantee her safety if his plan against the CP failed. His agreement made her Princess Zhongshuo even after his defeated the CP. And Yue Qin took her away as the Princess Heir. So she stays with him to keep him safe. She sees that he is good for his kingdom, which means that she will stay with him. But he promised to Jinghe that he would not force her against her will. He blackmailed the Priestess to have him win the title of Prince Heir over Second Rival and then used her to say that the Moon Kunlun was in Yan and by inference Mei Lin. There are different ways to force someone to do your bidding. I suspect that this will lead to their falling out. Once his position as Prince Heir and then Ruler is safe, she can have second thoughts. But manipulate once too often and then al bets are off.

Two good episodes. Jinghe's turn to twist in the wind because of a love for a woman. As if he hadn't suffered enough already.

Cdramas like to give the 2MLs storylines where there is a secondary romance with the FL. In this case it shows that he may have the body but not the heart. Is she repaying the debt for freeing her family? Had she killed the CP could she have escaped punishment? Gen. Lin or Mei Lin, which would make a more fitting agent of justice for the fallen by killing the CP?
