i don't think she believes her parents will ever come around to the idea [i mean... they've clearly stated that, even when prem tried saying her love for pat is similar for her mum's love for her dad--it didn't work], so she chose her parents instead of pat.
it's not like she didn't try to set boundaries! when she thought there was still a chance they'd accept pat, she tried setting them multiple times. telling them she didn't want to be with krich, letting pat meet her parents to see their love with their own eyes...
i think part of it is she doesn't want to hurt her mum [both mum's own feelings on it and the father blaming her for prem "turning out that way" and yelling at her about it enough to make her cry] and she didn't want to keep pat waiting and stress her out.
it's one thing having a psychologist assure you that you're an adult and you can have boundaries and another to deal with the consequences of asking for those boundaries...
