Actors in their 30s play high school students all the time, so I'm sure the other way around will be fine too. But I don't understand why they need to jump 16 years though. It's not how the story goes in the webtoon. Just say 8-10 years later instead? Strange decision.
Now officially confirmed as ML in Black Salt Dragon, production underway, release first half of 2025. Yes, and that is fair, because romance is a bigger aspect of Itaewon Class than Gyeongseong Creature. But when people speak of "romance dramas" genre-wise, they generally mean dramas where the main plot is centered around the romance of the two main leads. Which is something PSJ has not done since WWWSK.

Clearly this person has no idea what they're talking about. His last conventional romance drama was WWWSK. Itaewon Class had a romantic storyline (even a triangle of sorts), but it was nowhere near the main focus. Gyeongseong Creature was an action/thriller drama with slight romance. This would be PSJ's first classic romance drama in a long time.
