Oh, I don't doubt that. Their translators are underpaid and are not given enough time to produce the quality of subtitles that they should aspire to. But there's a big difference between better accuracy for subtitles on OTT platforms like Netflix and Disney+, and adopting the approach used by Viki.

I think A Prefabricated Family is the direct English translation, while Family by Choice is the official English title of the drama. Like Mom's Friend's Son and Love Next Door, or Graduation and Midnight Romance in Hagwon, or Thank You and The Auditors. Many recent examples.
No, Netflix original Korean series are usually around 6-8 episodes. Most of them, really. DP, Hellbound, Bloodhounds, A Killer Paradox, The 8 Show, Parasyte: The Grey ... the list goes on.
Why are we talking about sex scenes again? There's not going to be sex scenes in a Korean high school drama portraying teens. That just isn't happening, nor is it listed in the rating advisory. Netflix always toe the line with Korea and don't want to create waves. Like how they easily could have released Goodbye Earth without re-editing it, but again they bent to Korean culture. This won't be any different. At most there will be some kissing on a bed (mostly clothed) and a cut to next morning.

They do if they're successful. Plenty of Netflix originals that were initially branded as limited series were renewed for Season 2. It's not just Netflix either. Shogun on FX was released as a limited series and is now renewed for Season 2 and 3.
