Well, I didn't voice my disappointment for JSM acting because I want to respect the actress and the fan. But I agree with you, she was exceptional in other drama. Maybe she just didn't give her all for this role (mudeok), sometimes I can feel it in bts footages.

It's ok to feel that way. I think the writers are purposefully making his character into jerk at the end of part 1 and maybe some early episodes of part 2 so he can make amends in the end. If he keeps being lovable prince, I think he will not contribute anything to the story which makes his character useless.

Hey I feel you because love triangle is one of main reason I dropped lots of drama. I think AoS is one of the most non-annoying type of love triangle/polygon. SML is a decent man, you will not hate him, rather sympathizing for him because he had reasons for all his action and he's not trying to get in the way of the main couple. Third main lead is also a fun character, you won't hate him too. I doubt SML will have a love story of his own, maybe later in the end of pt 2, it's possible.

please watch ep 19 again. Jang Gang said himself, "I perform alchemy of souls and become a soul shifter, now I'm running wild." He's been petrifying even before he absorbs soul ejector energy, that's why he covers his body and hand with bandage. Sign of petrification appears on hand first (just like Mudeok body), him absorbing soul ejector only make it worse.
