I think something happened to interfere with the writing. The first two episodes were excellent, as was the writer's debut drama (Mystic Pop-Up Bar).
I imagine a scenario where the writer wrote the first two episodes on her own before signing a deal, and subsequently receiving pressure from the studio and/or Netflix to hurry up and/or makjang it up, resulting in the poor quality overall.
CM reminds me of a character from that cooking anime (Food Wars) who copies his opponent's original dish but adds just a small strategic change to steal the win.

To me it seemed like there was deliberate editing to make Chef Culinary Monster look like a strategist. More than once they showed him looking over at his opponent during their 1-on-1, and he wound up using similar ingredients (caviar & champagne) while expressing his confidence that his dumplings would win vs. Chef Son Jong Won's steamed eggs.
Plus in an earlier episode they showed the restaurant in California where both chefs previously worked (at different times), and the staff there told CM that he was a better chef than SJW. So I'm half-expecting CM to survive.
FYI, Netflix original dramas get the binge-drop, but when they partner with a domestic studio, the episodes are released right after they are broadcast in the host country. Also, Netflix reality shows get released in weekly chunks of a few episodes at a time.
