The device in first episode was shown that it was not his first testing the device, it was just the first successful attempt.(And that was only with his own voice) It makes sense, If I talk with you over a period of time, I will notice patterns in the way you speak. The device just takes that information and you can even at times see the device falling to remember stuff in where Seo Woo has to remind her. When Seo woo and Ha Won speak to device, the device evolves and changes too.

To answer your question(s). It would amazingly creepy. I think depends on the person and situation. The device shouldn't be used to cope, it should be use to end something, to put an end to it. Something temporary. I'm not sure what is defined as 'express permission', but for example when recording Ji soo, , Seo Woo told her that her voice would be used for something else. I think that's fine.

For the people who state the AI is totally out of disbelief. I don't think it is. The way my brain understand it is, Seo Woo recorded basic spelling and words. Which is how the Ai can speak, and Ha Won coded characteristics of Ji soo. The Ai then guesses how Ji soo would react, it's clear that the Ai doesn't know all the memories of Ji soo, but computes the characteristics and answers on how she would react/answer. And as Seo Woo and Ha woon speak with it, they help it get even more grounded.
