Black beans and roasted potatoes with peppers and onion.  Chased it down with homemade apple/carrot juice.  For dessert a couple of cinnamon cookies and hojicha tea.  I had never tried hojicha tea but had to buy a box after watching Marry My Husband (the ML and FL often drank it).  It reminds me of barley tea or roasted rice tea.  I'm enjoying it.  It pairs particularly well with dark chocolate for an afternoon pick-me-up.

We have had a crazy drizzly cold spell with temps in the 60s (high of 20C).  Made a pot of white bean veggie stew.  Will gradually be getting warmer tomorrow on our uphill climb. Going to enjoy this break from the heat while I can!

Mushroom and Lentils over Rice

This recipe popped up on YT and I decided to try it.  Per usual, I used it as a guideline.  I used French green lentils instead of traditional green/brown lentils.  Traded out regular paprika and chipotle powder for the smoked paprika.  Not crazy about dried tomatoes so I used Romas instead.  It was tasty, even hubby with his aversion to garlic liked it.

Lucky!  I live in a landlocked area and rarely get good seafood.  I love seafood, especially crab.  Also shrimp and lobster. Basically anything that walks sideways or backwards. 😄
