Time travel dramas are very rarely done well. I wasn't expecting sound logic to last long here. I think there's actually only one plot that did it properly great - Steins; Gate. It's rather similar to what's going on in this drama, btw.
If you can tolerate SEONJAEYAA every few minutes and dizzying time travel/alternate timeline shenanighans it's ok. It hasn't finished airing yet, so ending is not known yet.

This drama does show a corporate culture that may feel uncomfortable to the Western audience. Seniority system, workplace abuse, overworking, etc. But it is still pretty much the norm in East Asia, it's not particular to this kdrama. Some countries started to see this as a problem and blacklisting such companies so that newcomers to workforce market would know bad places to work, but it's of minimal help, because beggars can't be choosers, so to speak.
First off, she agreed to continue playing the role of his fiancee and to basically everything else. And it wasn't stupidity, she knew that she was guilty, especially after hearing of her ilness being a misdiagnosis. ML didn't know anything about her motivations, but he knew that somebody was out there to ruin and kill him, and that they may have had allies. So he was right to be very suspicious of her and not calling a police on her was very generous (probably because he already started to like her) - she comitted fraud, owed him more than $700k in property damages and mistreated him.
Second, he really needed that kiss at that moment to hurt his ex and apoligized for it later very properly. It wasn't done because he suddenly wanted to sexually harass FL.
Third, he didn't start to change only after learning of FL's ilness. It was gradual, you can start seeing signs of attitude change towards FL from around episode 6. I already get that nuances are lost on you. But you can't deny that he stopped doing his short contra-revenge on her immediately after he realized he fell for her and he even wanted to ask her on a date, but his blackmailing delulu ex called him at that moment to force him to go to dinner with her instead. And yea, he was a poor guy in the story - everybody in his life constantly left and betrayed him. From his parents and grandma, to his first employer, his ex and closest friend. Except for FL, but he didn't want to get hurt anymore in case she left him too, so he decided to let her go as well by ending their hostage contract (again, super genereous and FL even admitted to herself she won a lotto) and firing her.
And it was all before he knew of her ilness. But when he learnt of it he knew he couldn't stay away anymore.
So he may not have started treating other people better, because he still didn't know or care about their motivations. But he started with FL. And that was crucial to his redemption arc, because she nudged him in the right direction to become a better man and to start caring about other people as well. It's a well written plot, very deliberately segregated into parts. The first being FL solving her problem and reconciling with ML. And second being ML's redemption arc, which could not have happened if ML and FL were still at each other's throats.
