He most probably didn't forget her as he says to himself that she hasn't changed a bit and also continues using the yellow suitcase gifted by her 9 years ago.

Eunho was confident in pointing out who she referred to as the one having a successful future keeping in mind the fact she didn't know either of their backgrounds and financial statuses.
It was probably a directorial choice to keep it blurry at the initial point So we think it was Siyeol because of the teasers.
However when we are finally shown who she finally pointed, she comments that the fates have altered.

The writers have stated the main story begins from episode 3, so the things shown in ep 1 and 2 is more of a background and way of introduction to the characters life especially Eunho.

The two episodes tried to provide the necessary build up to the main plot as well as explain her powers,her beliefs and opinions and the reason behind it. If they had started the main plot right away it might have seemed way too abrupt and confusing.

Secondly the ML was not reduced to a pitiful character nor was he intended to be. He has shown at two times that he dislikes being pitied and is shown primarily optimistic, self- satisfied and confident in himself.This mainly arises from the thought process that if he himself doesn't believe in himself, there is already no one else to already.
The pitiful character is actually the 2nd ML.

Siyeol is shown as caring and a person trying to conceal all problems to himself, whether it be him hiding stuff from his grandmother or not telling the truth about his financial status to other teammates and coaches.

He is also not petty as shown by the fact he still cares and values his friend to such an extent that he is willing to pay for his wish. He also never held the partiality shown by the coach and football team against him. He never accepted gifts from him because he didn't want to be looked down.
Siyeol's lack of people around him is what makes him so similar to Eunho. And THAT will serve as a major bonding point between them.

His personality will be further shown and nuanced as what we have seen in the first 2 episodes is WHAT he wants the world to see. It's more of a persona he wishes people to always see as.His true personality will be explored in subsequent episodes which will serve as a character arc.

Thirdly, Eunho is not a human being. She has no moral compass she abides to unless it involves her powers.Her friend was not killed by powerful people nor was it implied anywhere till ep 2
According to the scenes she was being chased by guards or villagers either way because of something probably done by her husband and they were being hunted for treason and she DID NOT die in front of Eunho.
Last time Eunho saw her was when she asked her to never show up in front of her ever.
We don't know what happened and Geumho's problematic life as a human made her feel the human life is not desirable.

She is also not helping any rich guy, rather it is a transaction. She knows humans with money are not good people but that doesn't bother her because she is not under the governance of heavens.
Moreover she has stated the way it is fulfilled will be decided by her so she would basically choose a way that causes net 0 of deeds, which means her fulfillment of any wish doesn't DIRECTLY affects anyone.

And honestly after 900 years, she has seen many crimes and atrocities, it won't feel as impactful. Moreover as a heaven exists in this world, the deities are there to provide justice. She just doesn't care as she is not a human.Her lack of empathy comes from the fact she has never made an emotional bond with ANY human.

An example: When a person eats meat he doesn't feel guilty for doing so, as the person has no emotional ties to the animal. However if the person Rears that animal, it will be very difficult for that person to try to even kill that animal for said food. It is the same for Eunho.
