Yup. And also, Baek Chan Mi didn't have to go to this last blind date. Baek Chan Mi had a lot of injuries and at her age, there's so much a body can take. They should've taken an episode to explain Baek Chan Mi's past but that's just me, I liked this character very much...
Good series overall. Took me a while to into it (5-6 episodes) but once you are, it's good. For me, the weakest part was Gang Woo Won's sub story. I don't why I dislike this kind of behaviour so for me, it was a drag. Some action sequences are very good and so is the story. Worth watching.

They could've dropped the entire Vancouver part and focus on another group of those special forces instead and open a door for a season 2 with other characters. That way, you can include cameos from season 1's characters.

"One Spring Night" and "Familiar Wife" both have same lead actress with Han Ji-min. She seems to be very popular and respected in South Korea. I was like you with "One Spring Night" but Netflix kept suggesting me this title. So, I convinced myself to watch at least 2 episodes but as soon as leads met each other, I was hooked. You seemed to have liked the chemistry between both leads in "Dinner Mate" so I think you'll like the leads chemistry in "One Spring Night". Pretty sure you'll like it. Ah...side stories are also very good.
That's what I like the most I could careless about anything else all the moments this OTP has are all priceless…
For me, it was when Hae-kyung's mother died on the operating table and Do-hee went to the hospital and hugged him. It was a very powerful moment and showed us how much she cared for Hae-kyung.

No matter the source material, when it's made into a movie or series, it will always differ. Several directors/writers explained this. More often than anything else, it's a matter of pacing. They remove/add events/characters so they think the story would be more fluid and easier for the audience to understand and keep an amount of pace.

Since you seem to like this kind of drama, you should watch "One Spring Night", "Familiar Wife" and "Go Back Couple". I don't think you'll disappointed. "One Spring Night" and "Familiar Wife" are on Netflix and "Go Back Couple" is on Viki.

We had a discussion regarding this a few years back and he explained me how it worked for him. So, when he received a script for a show, it was season based and split in a number of episodes. They knew exactly where it was going for the current season. I guess it differs from one production to another.

Overall, this is a very believable story. The only thing I didn't like about the exes is they showed up about the same time. What a coincidence. That's what is happening when one has moved on and the other didn't. They were in this story only to strengthen the relationship between the leads and sometimes, life doesn't go the way you wanted. The drama "One Spring Night" dealt with FL's ex throughout the entire series and he didn't give up until the end. It was still a great show.

As for "Dinner Mate", the story made a darker turn with the exes and some didn't like it. Both exes had their own and very different background. At least this show explained their motives. I thought all of this was great as this only strengthen the relationship between the main leads. As for the FL, she wasn't this poor, lonely girl jumping from one part job to another, without family and being abuse by everybody and unable to make any decision by herself. Instead, she's an independent woman struggling with her personal/love life and trying to make a living as best as she can. I didn't think FL was this much in love with ML up until she showed up in front of him at the hospital. I thought it was a powerful moment as it showed us how deeply she cared for him. I really liked this drama simply because it felt more real and down to earth.
I will definitively add "When the Weather Is Fine" to my watch list simply because it's similar to "One Spring Night" (my all time favorite).
