So, my theory is that the marble remains red and steals "normal" women's essence to feed the gumiho, but if the marble enters the body of a potential love match, like our leading lady, it flickers blue. The marble then changes color depending on the love match's feelings for him, and it only permanently turns blue when she completely loves him. So when he went in to kiss Dam, her heart fluttered and turned the marble blue.
I suspect that after he saw the marble flicker blue when she first ate it in episode one, he has since been hesitating to make her fall in love with him because he came close to having his marble turn blue with the woman from his past, who died before his marble turned blue. He's probably emotionally scarred from having someone he cared about die, but on the other hand seeing the marble flicker blue is probably revitalizing his dream of becoming human again. So when he hugged her, it was symbolic of him choosing to keep her around and have her fall in love with him.

Well, Kang Sol A and B are the only women left in the study group, so even if he didn't say a name, it has to be one of the two, and Sol A is so dense she's going to assume it's B. The ending confused me, too, but I took the butterfly to be a new beginning for Geu Roo. Prior to the end, he was obsessed with aquatic life, and a lot of that was tied to his parents and his memory of them. I feel that the butterfly is symbolic of a new obsession (insects) that will replace fish and be more of a tie to his uncle.
As for the girl, I'm not sure. I'm assuming she's dying of something, and doesn't want her loved ones to have to make those decisions when she's gone. It kind of makes the show come full circle since the father did something similar by speaking with his lawyer prior to his death.

In my opinion she's the only one acting her age, while the rest of her peers are behaving like jaded 50-year-olds. It's normal for college students to be loud, stressed, and have whispered conversations in the library. Unlike her classmates who are hyper-focused on becoming top lawyers and have seemingly forgotten how to smile due to their ambition and family pressures, she has a better work-to-life balance. She knows when she needs to be serious/professional (e.g. her interview), but she choses to be herself and have fun when she can get away with it.
