Actually the ending offers no explanation about the tail or how she came back, so you didn't miss it or fail to understand the language. There is however a script in Chinese that details how she came back and why with a tail. But the production never shoot the scene. I found a translation in English of the scene up above in he discussion thread, I am putting the link here to it so that you can read how the drama ends properly. Not that anyone actually spoke about it during the final battle or shortly afterwards, but of course they know that Chang Yi is alive and that he sealed Shunde in ice with JYH in it. Her brother recovered after his fall but ended up in a wheel chair said that JYH would keep her promise to come back, a promise she made to Chang Yi before the seal. In fact his assistant ,the snake, told him also that Chang Yi had left to travel around the world, holding on to the promise.

Since there are comments below that state the happy ending is real because there is actually a tweet somewhere in this page that proves it, I checked all the comments below till I found a tweet that contains not a video but text in Chinese describing a scene that we don't see in the drama. It is true, JYH did come back after 300 years, in fact she startled CY when she jumped out off the fishing rod that CY was holding while fishing by the sea (CY was singing by the way, confident that JYH would come back). The text went on to describe that she flew straight to CY and they looked at each other smiling to their heart delight. The paragraph that follows describes the scene at the cliff: CY asked JYH why she had the fish tail. She answered saying that the pearl inside her changed her energy and form in all these years, and she in turn asked him if he had got back his tail, he answered saying that he had been waiting for her to come back to try so that she would be the first to witness it. And try they did, they jumped off the cliff and into the sea, that's the ending scene we saw. This is some plausible deduction and could well be the truth, if only whoever decided to end the drama as we saw it were considerate enough to lay it out for us all to see. Instead, we were delivered a scene at the cliff and a dreamlike image of them jumping into the sea if if Chang Yi was dreaming ... Ah I am so furious.
So Chang Yi was patiently waiting for Ji Yun He to go back to him as soon as the evil spirit of Shunde, which she imprisoned in her body for the sake of the greater good, dissipates forever. Three hundred years passed and we see everyone getting a happy ending with due explanations. The next thing we saw is Chang Yi sitting on top of a cliff with Ji Yun He, smiling happily to each other and then off they jumped into the sea to see who is the faster swimmer, surfacing from the sea and we saw in the distance all the way up to the sky two big fishes with tail, and this is the end of the drama!! Come on, why deprives us with at least one scene of how Ji Yun He came back and got a tail!! The haste of the ending, their ending, is a disappointment. I don't deserve it, none of us deserves it.
