I wouldn't call her coy. She doesn't tease, she's just oblivious. Remember, although she has some experience (from the previous life) it doesn't mean the experience was good. In ep 1 it's clearly visible that while FL was the lady of the house it wasn't based on a harmonious relationship. She was fulfilling her duties. Maybe the sexual experience was so bad or so irrelevant in her previous life she just doesn't care about it. Also, the ML could be more active. It's not like he's constantly trying and she denies him every time.
There's one thing I don't understand. The stepmother obviously comes from a good family, her father is an important official. How was she romancing the FL's father as an unmarried lady? Starst simply and fluffy. Lost the fluff around the confession of the main couple. Then there's some "darker" moments of fighting demons and what not with nothing light or funny. Gets only worse with the ending which is overly complicated but not convincing. And open.
