If I'm not mistaken the reason she goes on vacation in LITC and changes her identity IS related to a guy who cheats on her because she is boring, and then that being reiterated at her job interview just reinforces that idea. That, in itself, is a common trope.
You asked for 3 dramas.
"Scent of a Woman" is a drama about cancer but the lead goes on vacation strictly for her own empowerment, and even after meeting a man on vacation, she continues living her life for her own empowerment to the point where the male lead joins her on her journey and makes changes himself.
"Encounter" is a drama about a female CEO trapped into keeping up a certain image, who goes on vacation and has a romance with a younger man who coincidentally ends up being her employee. Just like in LITC she loosens up on her trip and plans to never see the guy again, but unlike LITC she doesn't run from him for a ridiculous amount of episodes once they get back.
The Package is a drama all about self-discovery on vacation led by a female tour guide who exactly like LITC gets suddenly dumped by her boyfriend. This drama also explores different kinds and stages of love with various characters in a way I enjoyed much more than this drama.
There are 3 dramas for you without me even having to think too hard about it.
Those were some interesting things you wrote about their covid filming issues which to me sounds like a recipe for last minute changes and doing what they can with limited time and resources, which would explain why this drama felt a lot like they were winging it and stretching things out and not in a good way.

Ready? I don’t think the writers were ready with a fleshed out script so they winged it. I’m also ok with cliches is they are entertaining. This drama also relied on cliches and was not entertaining enough to justify that.

LITC struck no emotions with me. The story didn't even justify the amount of episodes, and I wish I dropped it instead of hoping for the story to evolve. I wish I was as invested in the characters as you were but I just didn't care for any of them.
