Let's just break down his looks:
1. Curly white hair: We don't know who that is yet but I am sure there are leaks out there with his identity. (from the 12 min long clip which was leaked but never released by Youku)
2. Straight black hair with no bangs: That is YY
3. Straight White hair with no bangs: That is YY
4. Straight Black hair with bangs: That is TZ

YY is the one with the white hair. He gets it when he is poisoned. TZ is the human incarnation of YY. TZ has bangs (side and front) whereas YY does not. They both style their hair differently (and dress differently too) so you know it is TZ being stabbed by Yan Dan and not YY.

That's not YY but Tang Zhou. They both have different hairstyles (or wigs in this case)

Timeline according to me:
500 years ago: YD and ZX got human form and YY saves / names them
Present: YD becomes YY's servant and the events we are watching before she jumps off cause it clearly states 500 years ago when she jumps off.
I was confused about the 800 years thing as well cause how could she take human form 500 years ago, and be taking care of Yumo before that?🤔 It doesn't make sense. Maybe there was just a mistranslation and someone who knows Chinese can clarify.

I think he will initially believe it to be Yan Dan but some evidence/ploy by either the sister or that evil woman boss (don't know her name) might make him believe that is was the sister but no counter evidence would be provided to him until it is too late

I was thinking the same thing. My best guess is that every living thing in the immortal realm (trees, flowers, animals, blade of grass) will eventually take a human form, cultivate, grow their powers and become some sort of higher immortal and then die (this process just repeats). Yan Dan and her sister took a human form from the lotus whereas Yan Dan was trying to get the turtle to take a human form.

Tang Zhou seems to be an exception though cause he was born and did not take a form so they are capable of having kids. I wonder why they choose not to have kids🤔 (like imagine how strong the kid is going to be if two immortals choose to have one and they could probably end up defeating the demons easily)

Finally finished the 5 episodes. Here is are my review so far:

1. It is the first 5 episodes so they are setting up the plot, characters and their relationship with each other. I like dynamic between the sisters but I feel like it is going to go south pretty soon cause Yan Dan is more powerful than Zhi Xi.
2. I like how both of the leads are mischievous in their own way. He pretends to be righteous but is naughty behind everyone's back😆
3. Yan Dan is not stupid / clueless like some female leads. She is actually able to use her brain and draw her own conclusion when given the chance though she is a bit of a drama queen and speaks her mind which I like.
4. I love how supportive they are of each other. They cover for each other when the situation demands it (like with the Emperor and that Heavenly Soldier who came to take the book from Tang Zhou and also when Zhi Xi's boss was bullying Yan Dan). They also seem to support each other's hobbies / goals from her wanting to be writer and him trying to finish his book. They have such a positive dynamic so far where they don't belittle each other.
5. I think by ep. 5 he is actually starting to like her. He seemed a bit jealous when he was inquiring about who she was going to jar of stars to but he covered it up with the heavenly rule. Yan Dan seems eager to be in love though he warns her against it but he needs to take that advice himself as her charm is already pulling him in.
6. I like the visuals / costumes.
7. Everyone's acting is excellent. They really pull into this world with their body language and the small gestures.

So far I have no complaints. I am preparing my tissues cause I know it is just going to get sadder from here.
