When starting out, K-dramas are probably best, but since u asked:
--- "Autumn's Concerto" and "In Time w/ You" .... not Chinese, but Taiwanese.... super popular, especially "Autumn's Concerto", it is a MUST-WATCH for any D-addict, especially a new one!...XD
--- "Scarlet Heart" (aka BBJX) is also a must-watch for anyone venturing into C-dramas, it is super popular and one of the best .... Based on real people in history, so some tough things to swallow if u can take it .... Lots of fun w/ at least 5 princes falling in love or loving her, but also a real bloody fight for the throne!
--- "Prince of Lan Ling"... another super popular C-drama
--- I am one of Wallace Chung's biggest fans on MDL, but I won't recommend "My Sunshine", at least not as a first C-drama (I was a bit disappointed, I blame the author) .... but worth watching for Wallace's sake.
--- If you speak French, I recommend "Too Late to Say I Love You" (No Eng subs) ... Wallace Chung is amazing in it!
