You should try Time Between Dog and Wolf, it's a drama that shows their chemistry better. I have almost the exact same feelings as you in everything you said though I'm willing to give My Demon a chance for Kim Yoo Jung (I love its cinematography and the visuals it give though). I want more sageuk scenes for Park's Marriage Contract too. It's cool they used the young Deokim in Red Sleeve as young Lee Se Young here.

Yes there are period dramas in the west and China, but do you see Joseon and traditional Korean costumes/culture in those shows? NO. I do not expect to see hanbok in Jane Austen adaptations nor do I expect to see regency fashion in sageuks. Plus they have different cultures so I expect to see difference in their period dramas. My Dearest for example is partly based on Gone with the Wind but the Qing invasions in that show can only be made in that show since Qing invasions is part of Korean history but not American history.
