I think the reason why he only sees color related to her all depends on how his powers work. For this I pose a theory:
All of their powers work according to the timeline they originate. What has happened and what will happen has already happened as per the timeline. All we are seeing, even the "timetravelling" and "precognition" are things that have already happened, only in different sequences from our and their POV. The MC's powers work as a corrector or balance to the timeline to make sure it doesn't stray. He is destined to save the FL, thus why only she has color. The moms "precognition" abilities also work in a way that seemingly "manipulates" fate to do their bidding, which is how she got rich in the first place, but even that is predestined. Choice does seem to be a factor in the sense that she can choose to accept "fate" by following her dreams or doing something to avoid it, etc. but in all likelyhood, it is all part of fates manipulations to maintain the timeline. Thus she gets rich through her dreams because she was meant to become rich through them. She hasn't actually changed her original fate because fate meant it for her. The MC's powers are similar. In a way, when he travels back in time, he enters a separate reality in which the only differences could be the existence of the FL up to a certain point. To maintain his original timeline, he has to save her. If for some reason he doesn't then the timeline changes and she more than likely does not exist in that timeline. But, considering how things have happened so far, pretty much none of them have changed fate. Fates hold on them is very strong and he will likely end up saving her either way to maintain the current timeline.

Its possible that the mother dreamed the wife with someone else. Plus the relationship between the ML and his dead wife were already straining it wouldn't be a surprise if something happened between the wife and someone else within those 7 years. Perhaps she was feeling guilty and was grasping at straws the moments before her death, hoping that the ML would come to his senses finally and put their family first. She was probably looking for reliance in him despite being in a depressed state herself (probably due to guilt from "cheating". one night standing maybe?). Thats quite the same for Sang Won's situation with him being captured and experimented on by the government. The others we see in the abandoned lab near the end of S2 are likely recruits that he found who suffered similar situations as he did. One thing to note though in the Webtoon is that One essentially became the most powerful being by consuming other variants including "Zero", which is why he was able to start the monsterization outbreak. They definitely changed the character a lot and probably referenced several other characters for his template but the main template definitely seems to be "One". The seemingly "Half-Monsters" that we see in the lab are likely fellow "Variants" who have been held captive to be experimented on before the monsterization event. In the webtoons "One" was the one who started the monsterization event but thats hard to say here. A key difference that they added in the drama is that Sang Won had a wife and now a "Monster Child". In the webtoons, "Variants" are known as beings without a "Soul" as opposed to "Monsters" who have their "Souls" take over their bodies. Basically the process of "monsterization" implies a separation between humans and their souls, but when the 2 come together and the "soul" wins in taking control, they lose their humanity to become monsters. The reason I mention this is because the "child" of Sang Won would essentially be the child between a "Variant" and a "Human", a being without a Soul and one that does. Her character is also eerily reminiscent of another character from "Shotgun Boy" despite massive differences in personality and some of her power sets. This character is "Zero" who had the ability to pretty much turn people into "monsters" and was essentially a "God-like" character with an immense healing factor. These 2 abilities are very much seen in the "Child but it also includes seeing someones past through touch, an ability that Hyun Soo has and probably the child does as well. Mr. Xu is likely a programmed AI made to guide participants. Noah might have even transplanted/encoded his own memories or something successfully into the system as a precaution. After all, if one can completely swap someones memories, its not a stretch to encode memories into an AI, essentially living on within the simulation in a way.
So after episode 24, I'm thinking that perhaps this Fan Xiaoxiao took over the Lighthouse System project to take away her own pain in life. I say this because she clearly feels a lot of unhappiness and resentment due to her past relationships. Either she wants to take away her own pain by using it on herself eventually or she plans on using it on the people she's close to like Jiang Bo in order to make them more obedient towards her. Every test subject prior are just disposable guinea pigs. Thats why she has people just spying on and observing Jiang Xiaoyuan. She wants to see how she will turn out since the previous test subjects essentially ended up as failures. Considering the situation and the abruptness of that kiss it would be more unnatural for her to have closed her eyes. There are 2 instances in which she would close her eyes when kissed suddenly, 1. She accepts the kiss and follows through, or 2. She forcefully closes her eyes in disgust and more than likely would push him away. Neither of these are the situation since it was a surprise kiss that caught her off guard and she has no idea what to do because she is in a state of shock and confusion. She isn't really against it since she clearly has feelings for him too which is why she doesn't push him away or forcefully close her eyes. She also isn't getting into it because she is mentally drawing a line with him for his sake. Thus, the acting in that scene with her eyes open and going left and right as a sign of confusion is actually pretty on point imo.

They likely "suicide" because they are unable to accept reality since they have lived a completely different life in their memories, much better than their current. Thus their "insanity" is more likely a case of extreme anxiety and stress induced by a denial of reality. After all, "suicide" is often used as a way to escape reailty. If one accepts reality as it is and properly goes through the stages of grief then they probably won't go down that path. A good support system is necessary. So the FL and ML are likely going to be that support system for each other. Something "good" in this life that makes losing their other life a lot more bearable.

Ok so from the looks of it, 2025 timeline is almost definitely the simulated one. However, I don't think the 2018 one is real either. I think its a serious case of "Inception" (That reference for sure was hinting at something). Its a case of a simulation within a simulation. Xu Jing yang probably does exist in the real world but not in the simulated 2018 reality. However, his experiences in the real world are mostly reflected in this simulation, the only difference being the existence of Xu Jingyang. In fact, he might really be the creator of the Lighthouse System irl. But, perhaps something happens to the System and now someone or something else is in control.
