You may not be concerned about the participants, but it's part of productions' job to be, and what you say about them needing to consider their integrity and reputation includes how they choose to treat the participants they hire.
Starting over without considering the participants would've been unethical and damaging too; hence, why I said in my first response that they chose the most fair (to the participants they hired and have likely spent months with throughout the entire process) and honest (to us viewers by being upfront about the situation quickly) that they could given the issue and what they had to work with.
You're only concerned about your pov as a viewer, but production had to worry about much more than that. They also have to consider the small potential participant pool they have to work within a country as small and conservative as South Korea.
How many options do they really have to work with, especially if they want to have more seasons than this one? They can't essentially waste an entire cast for nothing that they couldn't use again when their options are already limited.
It also would've taken way longer to cast and do background checks on an entirely new cast than just two new people, and they also had contracts/deadlines with their distribution partners to worry about as well. Failing to meet those would've done far more damage than a few viewers being upset by they choice they've made to do things this way, especially when there are others who like the participants having more time to know each other and the fact that this season has basically turned into a mix of Transit Love and His Man by this situation.

Starting over with a new cast isn't the lesser bad solution because it impacts the original cast who gave their time to the show, and Jaeho, for example, even sacrificed his relationship because being able to come out on the show was so important to him, and had they'd done what you suggest, it would've taken that opportunity from him.
Also, them taking their introductions was moreso for the new additions to the cast than us, and they already made it obvious via editing even in the first episode of the show that something was up when Jaeha(?iirc) came in and sat across from Hyunjun and they made it obvious things were awkward between them.
One if the introductions of the cast members when they were walking in on episode one also said something about wanting to do things differently this time. They wouldn't have left that in if they wanted to pretend the cast didn't know each other for our sakes because those two things they chose to leave in/highlight made it clear from the start that at least some people on this cast, at the very least, already knew each other/did this before, and that would have to be talked about by leaving those in.

They made it known at the start of episode two what happened and that this is a reshoot and aired episode 2 together with episode 1, so there wasn't an unnecessary delay in telling us.
They handled this situation in the most fair and honest way they could have.

Shulang puts him through hell, but Fan Xiao accepts it all without complaints. Also, the boy with Shulang in the credits is the infant at the hospital in the first episode whose mom almost killed him for being sick. Fan Xiao covered his medical costs and convinced the mom to give guardianship to Shulang so he won't be alone (the mom is dying and the boy would otherwise go to an orphanage. He was also willing to take the boy if Shulang didn't).
Fan Xiao also gives up his luxurious life, quietly watches over Shulang to make sure he's okay, confesses everything he's done, helps the hostess start a new life, and more.
Unlike a lot of other books/shows, Fan Xiao's actions aren't just glossed over and forgiven right away. It honestly gets to the point you almost feel bad for him, lol.

In the novel, he's still there, iirc. He makes a remark in his head about how differently Shulang reacted to his breakup with him vs Fan Xiao, despite him being with him longer.
She was so annoying and kept guilt-tripping Dao a lot and adding more to the stress he already had.
She also kept contacting Jaemin for things, and in the webtoon, she's the one who told her parents where Daon worked, iirc.
She also was rude to Seunghyeon when she met him because she wanted to meet Jaemin instead and got mad at Daon for liking Seunghyeon instead of Jaemin.
This show is phenomenal. They've casted some incredible actors, especially the main leads. I hope they both have long, successful careers because they are both so talented. The versatility they've displayed in this one show alone is more than some top actors have displayed in their entire careers. Their chemistry is insane too.
