Definitely not about the trope, I can see she actually don't care about the pain the guy inflicted to her as much to the point where she would voiced her concern out and was even actually going to strike back at the guy with a rock. But in the end, she decides not to strike the guy and due to how Gang tae had strike him for her, protecting her in a way, she felt relieved enough to let go off the rock and told him about how she is in pain because she wants more attention from Gang tae. She fully enjoys the attention he gives her and wants more of it. She is still strong and is only now acting "weak" to get more concern from him, not because the ex-husband hitting her was the focus here.

While I can't fully change your perception on whether the episodes is getting worst because my opinion is opposite of yours, I at the very minimum want to share some thoughts I have gained through this drama for the 8 episode that is out. I will try to keep it short.
The message of drama or the core theme has always been 2 words, "Humanity Healing". What does this means exactly? Well, the drama have been trying to shed lights on patients with mental illness where the patients are neither perfect nor understand the consequences of their actions. And yet, "it is okay to not be okay" is trying to prove what the titles say, even in the toughest times, you can embrace your weakness, learn from it and grow. Overcome those obstacles and happier times will come to you. It does not matter whether you are a patient or a normal individual actually because everyone is human, we all have our own burdens so we must be aware that it is okay to not feel "normal". Everyone has the rights to treatment and I believe the writer highlights this theme well so far.
It could be that the latest episode shift their attention more on the Lead's couple which could throw you off or maybe the Fairy Tale is losing their novelty feeling for you. Because I am not fully certain as to the reason of why you couldn't understand the reason so to summarise on the episode's messages.
Episode 1: Boy with Nightmares: We all faced hardship in our life so even when it is super difficult, we must never forget it and make sure to keep it in our heart. Only then can we learn to overcome the barriers and grow stronger. A person must first taste failure before success can reach them.
Episode 2: Lady with the Red Shoes: To others, obsession may be unnatural/ugly but it could also lead to a noble/beautiful outcome, don't let others judge you or stop you from your obsession that can lead to a good outcome. Just like how painters/musician being obsess over their art can create masterpieces.
Episode 3: Sleeping Beauty: Trying to avoid hardship forever in your lifetime is impossible, someday you must experience that hardship one way or another, so never live fearfully and always hope for the best because just like how difficulties can get you, happiness could be right around the corner. The manic patient lived in fear due to his parent's abuse but because he could finally reach that day of happiness when he reveals the truth, he has hope for a better treatment and a happier future.
Episode 4: Zombie Kid: We all wish for simpler things, such as a mother's warmth. It could seem complicated and full of twist but we as humans don't always truly desires materials wants. This is why people miss their parents as they grew older.
Episode 5: Cursed Rapunzel: Due to the way our society is built, we are all trapped in our own "cells". Whether it is work, families or other factors that make us special, we wish/pray to be saved, to be relieved of our duties. We can have a certain amount of expectation but it must not be unrealistic. Thus, we can't keep running away/stay trapped and must fight it.
Episode 6: Bluebeard and the 7 wives: Being different doesn't mean you should be isolated from others, you just need to find those that understand you, accepts you for who you are. There is someone for everyone. There is another moral for this folktale where curiosity kills the cat but I like how the writer interpret this story for the moral I mentioned which is much more positive. Gang tae relationship also start blooming for Mun Yeong as he begun to understand her more.
Episode 7: Cheerful Dog: We are so tied up with our pain/scars/negativity to the point where we can't move forward. Being stuck feeling the same trauma everyday and not knowing to letting it go, even when the positives is getting close to us, we are unable to free ourselves from being pessimist. We focus so much on being a pessimist to the point we forget how to be happy again, only tears remains and sadness prevails. Hence, the act of cutting that leash is a must, even if it requires another person to help you. So get a doctor. For me, best episode yet.
Episode 8: beauty and the beast: Initially the moral was about you not owing any responsibilities to anyone, the idea that only you can help him is false and the thinking that the smaller acts of kindness can overshadow the acts of selfishness/harm he inflict on you should never be thought about because being constant abuse is bad for you. The writer didn't want to strictly follows this message and mentions how it is still possible for someone that was selfish from the start to turned into someone better. We can still learn to forgive and I am sure we all can give second chances. Just stay away if they still commit the same "harmful" actions after those second chances.
Those are the summaries with plenty more hidden interpretation a person can have. This is why the writer has not failed me yet and gave me the inspiration to write all his out for you since I hope you will have more understanding to the overall story. I wish to share the same happiness I have with you and hope you enjoy your journey whether it be outside or inside this drama.
I believe the part you thought was missing could likely be the "fantasy-like/mystique" feeling from the Fairy tales which added a sense of mystery to the atmosphere. From episode 1 to episode 6, the fairy tale was much more "darker" with a theme that makes the specific episode very intriguing and because our leads isn't as frequently "together", there is also more focus on other elements.
Personally, I actually thought Episode 7 was one of the best episode in the drama so far because it has achieve such an amazing balance of lightheartedness and deeply emotional where I have both laughed and cried at different moments. That to me is something rare in a drama and while episode 7 may not be that episode for you, I am sure you have this feeling from other episode or from a different drama. Episode 8 was just pure lightheartedness and a nice change to the "dark" vibes I was getting throughout the previous episodes. It greatly shows that as Mun Yeong cuts her hair, all her misgiving was cut off at the same time with our hearts relaxed. My feeling of what the writer wants to convey in episode 8 are the "calm before the storm" but making sure the calm is as peaceful as it gets. I felt my heart slightly broken as I watched episode 7 and after episode 8, the pieces mends a little which makes me ready to move on to the next chapter where Gang Tae can finally stop suppressing. KMY who have now partially healed would now have the opportunity to heal Gang tae, to release the full tension the safety pin had and keep it happy.

Ever since Mun Yeong saved his life as he almost drown in the frozen lake, her eyes is what drawn him to her and also the fact that she was the first to give him some amounts of love which he needed at that point.
Ahhhh, episode 7 is such a feel-good episode without as much conflict portrayed. Best episode out of the previous ones and the orginal story like zombie kid and cheerful dog always gets me TT. Definitely shaping the story to heal us fully once we reached the ending and my dear wish is for the drama to maintain this excellence (which so far it has).
