He is not stalking her. Stalking is an unwanted and/or repeated surveillance that the victim is aware of and it is putting pressure on her and disrupting her life.
There is no such thing in this. He is just following her because he is curious she has no thread to fate and she gladly welcomes his appearance because she likes him.
I don't think he is the main villain. He is too stupid for that. He is probably just a drug addict.
The stupid ones are the tools of the smart or evil ones. Remember when late chairman Ju talked to the bad guy and said to him "you will pay for this"... She used a tone that says the guy is very close to her... A guy she is very familiar with.
For me it is not the nephew. He comes after her son and her grandson...
from my years of experience I think the joo seok guy is the villain , he might be the one who switched madam joo's…
But he never had any problem with the chairman Ju and he is only the nephew.... She has plenty of child and grandchildren.. Can he beat them all to inherint everything?

The death count is kind of crazy. So many dead people with just 2 eps. And why the killer kills people who are not able to recognize him anyway. I hope this has a good explanation later...
Despite the mix of genres, I like what is happening between the two leads and how they are drawn to each other. Also the FL thinks men who fall for her could be hurt but she does not know what happens to women who fall for him...
I didn't get something about the cupid. Why were they cursed? what went wrong and why do they blame the main lead?…
So far my theory would be that ML was in love with a young lady who was to marry the king so one of the cupid wanted to make him fall out of love to save him from his misery. But there was a plot to kill her and ML ran to protect her and he was injured/killed. The reason why he became a cupid is unclear (Maybe he was one already) and why they were doomed by a court lady it still unclear for me.
The scenes where the cupids are shown doing their job with their wings should be taken as a representation of what cupids are and not who they were because like you said they lost their wings after the incident and one of them was turned into a dog. They still did the cupid's job but in the form they had for 500 years.

Beauty is in the eye of the beholder so for me, yes she is beautiful. But What I like more is that she is credible portraying that character. So far...

Maybe she knows nothing about Eros and Psyche and she is just judging on what she sees this is why she talks about the guy who abandonned her in a police precinct.
I agree it is weird because she is credited as a main lead but the character is already dead after three eps. I cannot imagine that she faked her death to put FL under fire. But why not? The drama looks crazy enough to use that plotline.
