Personally, it's better if it starts slow at first rather than so good from the get-go and then starts to go downhill. Try to give it more episodes and if you still don't find it interesting, then it's probably not for you.

It's about helping Yan Dan just forget about the love she has and the memories of it from her so she can go to the mortal realm with no strings attached. From what I understand, he uses their hair strands because it's something that actually belongs to each of them. It's a little symbolic and meaningful as Yan Dan mentioned the myth in the mortal world, that when a couple in love ties a knot with their hair, they will remain together for three lives. So their hairs are like a representation of their love that binds them. He didn't cut entirely their love, but only the memories that hold it.
# 2 - It's too early to speculate. From the trailers, he was about to go investigate perhaps with his memories intact, but somehow will lose them. We still don't know how that will come about and the reason why. And he's not gonna be powerless, it's obvious he still has his powers, only his memories will be gone. Also, I think Tang Zhou's personality is just the unrestrained version of Ying Yuan. Ying Yuan bears a lot on his shoulders so he's more resolute, but he's still mischievous...i.e. with Yan Dan mostly. While Tang Zhou is purely that prankish side of him without all the restraints.
