He gets more mature and confident as the series progresses. It deals with death and precognition so such stuff change people.
It's a drama after all, so the cringe parts were added to make the guy relevant. Otherwise he would've been Superman. I do agree, it could have been written better.
You are right about the flawed and toxic characters but towards the end most of them take the right path. That is significant development based on reality. You can't expect a person to make a total 180 in persona, that would be fantasy.
Han Gyeol's abuse is significantly toned down after the revelation. Eun Chan grew as a person, from only knowing odd jobs and how to take care of her fam to knowing and forming human connections to seeing the world. Min Yeop part was weird and hilarious because it mimicked real life a lot. Han Seong and Yu Ju accept each other for who they are. Han Gyeol finally broke free of his long ass infatuation of Yu Ju. He also became productive. Japanese dude finally understood that his uber caring came across as creepy so he lets go.
Baby steps. The only unrealistic part of the show was..going abroad for years to be a ...barista ?! She better have used that intricate kaffee knowledge to grow her hubbie's business.

ML go on blind dates ? That wouldn't work. Because the FL very well knows that no other girl can neither get his interest nor can touch him because of the trauma. Only her, and the mother. Later when it is revealed that there is another girl who the ML is quite friendly to (as a friend), that does get the FL a bit jealous which was cute.

Fair. I didn't feel that though. Perfectly moderate for a pure no nonsense romance drama. There are other shows in this category which are of the snail kind. It makes sense in a way that, it wouldn't make sense for either of them to give their universes up. They have duties, responsibilities, families. Sure, they can defy and manipulate time to hang out, date. But the male protagonist is a monarch and a sovereign. He needs to settle down, produce an heir..so on so forth. Unless he decides to abdicate at some point and other family lines inherit the monarchy. I guess it's an open ended fantasy ending but given what they went through together, it was unsatisfying.
