Eh... she's doing everything to survive no? Like in the first episode, it makes sense how she thought the King was cosplaying as King because it's what they are doing in present time in Korea.
After she started to believe that she is indeed in Joseon in ep2, she kept telling herself to survive no matter what and to find the book. Her cooking skill is the only reason why she's not killed by the king in the first place in ep1 so she's utilizing that in every episode. Her knowledge in history also saves her a lot of times. Because of it she knows what kind of meals suit the person she prepares it for (reference to ep4).
For me it's nice that the FL keeps insisting/persuading that she's from future to the king as there is no deception from her. When the time comes where she goes back to future, the king won't be clueless as to where she might disappear. That is why the book contains his yearning for her because he knows she doesn't exist in his period (idk if you get this, sorry for my english)...

Director JTY is really doing a great job with food scenes! I love it when they do close up shots of the foods and the exaggerated reactions from the King after he tasted them!!
