An important ingredient in such stories is undoubtedly the antagonist. How the villains are written and portrayed are equally crucial to give viewers that hook to buy into the plot.
Out of the dramas you've featured, I've only seen Sisyphus and I absolutely relate to your take on Sigma. The drama wasn't perfect but it gave me enjoyment for the genre I love and I felt the characters, including Sigma, were decently developed and convincingly portrayed.
I haven't seen the others, although regarding Criminal Minds, which has Lee Joon Gi in the cast, I've seen a few seasons of the US version so I understand the concept and the type of cases that are focused on. I'm going to add that to my PTW. For Catch the Ghost, I actually came across the poster before and my initial impression was that it had supernatural themes (including the Ghost in the title) but I've got a better understanding now thanks to your insights.
Other dramas that I've got in my PTW list that wasn't discussed include Nobody Knows and Partners for Justice (though this one is concerned with the forensics aspect).
The ones that I've seen which fit into this genre or themes are The Devil Judge (still airing), Beyond Evil, Taxi Driver, Luca: The Beginning, Mouse, Voice series, Kingdom (I add this to the mix because of how compelling its villains are, including the recently released Ashin of the North), Tell Me What You Saw, The Cursed, The Guest (both relating to the supernatural but the way the villains are depicted is simply astounding), Lawless Lawyer, Remember : War of the Son, and Less Than Evil, just to name a few. I think I went overboard lol
