Actress Ni Ni said in several interviews that she went to gym and trained for muscles before the filming of this drama. I've read the novel and finished the drama. Parallel World the drama is very faithful to the novel it is based on (West Out of the Yumen) and the author labelled the novel as romance.
It basically tells a love story of redemption and let-go of the past. The FL was an ambitious but careless and sort of "heartless" person, after losing memory, she learnt about love from CD and her new friends along the journey and became a softer person. The ML in the process let go of his past, got saved and began a new life.
Of course there are friendship, actions, adventure along the way but the central story is a love story just like the synopsis says (Who says that a romance drama can't contain friendship, actions, adventure and etc?).
While Candle in the Tomb series are basically aventure stories without a love theme (romance is more of an add-on).

So who is the old man and why did he say meeting chen duling's character is fate?
1. He and the Chen Duling character are added because of the censorship (to imply that the whole story is fabricated as it's not encouraged for C-dramas set after 1949 to have supernatural elements). In another Wei Yu adaptation "Rattan", they changed Rattan's identity to be "ET" to sort of explain it in a "scientific" way (lol). For this drama, if they change the whole setting to be "ET", it would totally change the flavour so I don't think there's a good way for them to explain all these supernatural things using a "scientific" way (pseudo or not).
2. The old man appears in other Wei Yu novels (though not in this one) and Tencent have bought the copyright of most of them. They probably want to use him to connect all the Wei Yu dramas (to be filmed) and create a "Wei Yu series" as sort of brand..

She does have a lot of works of movies, just last year she has two movies aired and two filmed and yet to be aired. She just doesn't often shoot TV dramas. Other than that, she also appears in one stage play each year. In C-ent, movie actors are considered higher than TV actors despite not being popular in fandom and having no traffic. So between a decent movie project and a TV project, one would like to choose the movie project. A lot of actors, after gaining traffic and popularity, would like to appear more in movies but it's not easy while Ni Ni is a movie actress since the beginning.
The FL is a devotee. She got into the ML because of his body. When they first met, it was mainly about sex. The writer herself claimed that she specially created a person with disability like the ML because she wanted to write about a FL with acrotomophilia and the ML's prefession (undercover police who lost his leg) fit that.
Also in the end, three years after the ML died, the FL killed herself.
It's not a simple love story between a woman and an anti-drug hero.
It'll be hard for the adaptation to keep these ideas of the author I suppose as it doesn't fit the positive spirit that C-dramas are encouraged to convey.

The director&scriptwriter Su Chao Bin used to write and direct thriller/horror/mystery movies and got him a name, even winning Golden Horse Awards and Hong Kong Film Awards. I saw some people had doubt of his contribution to this drama as they felt it didn't get the vibe of his earlier works. We can't tell how much of the mystery/supernatural vibe got hindered by the censorship (other than the sandman fighting scene because one actor who took major part in this got his whole part deleted and he posted on social media the original makeups). But it could be the case that the lack of experiences with the censorship from the Taiwanese team did effect the final result somewhat (it would be harder for them to strike the balance and because of that they may not commit their boldest idea to the screen), not to mention as you said, it could be very arbitary and it's changing all the time :(
