I agree with your analysis of these plot conflicts. But I'm confused about what you're saying about the main couple's conflict. Poon was to largely to blame. Even though he wasnt trained on those responsibilities and probably thought everyone had a rhythm already established that wouldve worked, he was the head chef. So he was responsible. And he took that responsibility knowing it.
And while it is not Ahtip's responsibility to run the kitchen, it was his responsibility as boss to make sure that the leadership position being newly filled, by a relatively new chef, was discussed. He should've had a meeting and discussed what the responsibilities for that role was. I believe anyone who has been hired or promoted knows this. If the previous person who had the position was not able to train their replacement before leaving, it is the responsibility of the boss to at the very least go over it.
Where most of Ahtip's blame comes in though is when he automatically assumes that the kitchen used Ahtip's feelings for Poon to get a lighter punishment. And then getting mad because Poon had to find alternate employment while on suspension. And then being petty about. That is where Ahtip did wrong. Granted, it was all out of fear, but still. Its wrong.
Ahtip has let his fears cloud his understanding if who Poon is as a person. So Poon is 100% justified in leaving.

Just seems like a lot for 20 more minutes: Ah Le likes Amber regardless and separate from his past as Wen-Wen, Ah Le's mom is okay with their soon-to-be relationship and what that means for her desire for grandkids, and potentially that trip to the mountain again (which I see as a good final moment). + Obligatory finale moments for our support characters.

And with it being written into the last 3 minutes of the episode, and with the next episode being the finale, which is only like 20 minutes - I just really fear that it's going to take the spotlight from the identity situation. Amber's identity and how Ah Le handles it was framed as the main point of the story. Having this incredibly relevant, rarely discussed, and serious issue brushed under the rug in one episode to make way for the same issue that is discussed in 85% of BLs (and queer stories in general) just feels ingenuine to what this story has been doing. And quite frankly, it just made me tired. Nothing else. Just tired.

Oh for sure. Even without identifying as demi and bi, I got a lot of shit about not wanting to have my own kids (a sentiment i have stuck with firmly since I was like 5). And I don't even live in a collectivist culture like much of Asia.
It's just... I don't think it was necessary to address it in this particular story. The mother hasn't harped on her wanting grandkids when she's on the screen with us. Ah Le has never expressed interest in wanting to start a family. And we ain't even gotten over the very big and already present plot/relationship conflict. It just wasn't written to fit, so it feels out-of-place and just wrong.
