Those words are well known in the gay community: jock, bear, twink etc. It was not meant as an insult. Twinks are, well, rather young gay man with no muscles, lean body, while a bear for example is a big guy with muscles and lots of body hair. This is about body type, overall appearance etc.

Oh, I think it has to do a lot with the acting. You just can't reinvent the wheel. Because of the fixed pairing in BL, the dynamics are most of the time very similar. Look at JoongDunk. Joong will always be the "top", the cool and grumpy guy. They don't dare to mix their roles up, so it becomes boring and difficult if you always have to act the same way. How are you supposed to bring something new to the table?

About the acting ...
I always see people saying "needs improvement", "more acting classes", "better acting coach" etc.
I can do better without any class. It's not that hard. How many people worldwide came into this business with zero experience, zero teaching.
