I recently watched One Spring Night. To me it doesn't even come close to compare, I barely even liked it.
I strongly recommend A Piece of Your Mind, My Liberation Notes, and maybe When the Weather is Fine, and Summer Strike. If you're open to watching Chinese dramas, I strongly recommend Meet Yourself.
I wish I could rewatch it. The Korean remake was recommended to me by someone who hasn't seen the original. It took 50 minutes before the leads even met. *sigh* And from a hint in the beginning, I suspect Mariko has been turned into a guy and the rest of the family hasn't even been introduced yet. This is why I normally don't wath remakes...
Ever since I watched this drama (2016), I have been looking for something similar. I do NOT mean similar plot. I mean the mood and atmosphere, the quiet gentleness, the sad yet heartwarming "feel" of the story, the comfort and connection the leads find in each other, and the cinematography. The only ones I've found are My Liberation Notes and A Piece of Your Mind - by the same screenwriter, so it's not surprising that that's the most similar one I've found! I wish there was more...
Was there really no other way to make it 16 episodes? I have probably never seen something so stupid. They know the villain is obsessed, so if they have to do something crazy as to let Ah Rin travel alone (and her mother isn't there on time after all this!!), why not use it as a perfect opportunity to catch Yun Jin?! It should have been their plan to be there to wait for her to come and take Ah Rin.

I think you're right about Kwon Yoon Jin, but I think that it is the twin brother died and the husband is the one who is impersonating him. He makes Kwon Yoon Jin think that he is his brother, and he does this for the same reason he didn't tell his wife: he loves his child but is tired of being a stay at home dad with a wife who is always working, so when his brother died he took his identity as a way to have two lives and no one will see him as a cheater.
Of course, I am not at all sure, it was just what I was thinking!

When it's an older woman and a younger man, the woman is often lonely and insecure (even when she's successful and hides it by pretending to be "cold"), while the guy is confident and happy, Sometimes, he's like an excited puppy who won't stop jumping up and down until she smiles - the kind of guy who falls first and follows her around. She's worried about what people will think and that he¨ll be tired of her soon. She may be older, but is often less experienced. It's like the "noona romance" type of woman needs a younger guy to be able to feel free and relaxed in life; she needs to laugh more and have fun, and young people know how to have fun.
Well, maybe it's not always like this, but I find that many are similar. I'd watch a drama with a mature FL who knows what she wants and seduces the ML. Then they can laugh and have fun, but I want her to fall first and be more like a Mrs Robinson... who doesn't lose to a younger girl in the end. *lol*
That's one reason why I prefer older man/younger woman. Or maybe that's because I prefer a mature man to a puppy boy, and the same with women.
