I don't disagree with what you're saying in regards to him wanting to strike fast. As well as the fact that the relationship needed to be established for the storyline that comes after. This makes sense. I don't think it would be too fast or too early if they had done a better job of showing the development of their relationship in the previous episodes. I just don't think they did a good job of showing that in the drama and that's why the disconnect is there for me.

Novel has a SE. Huntington's is fatal and incurable so it is highly possible the drama will also be a SE. It might not be - they may go the bittersweet "let's keep looking for a cure" route. But I would prepare myself just in case. (if you hate SE's that is)
This is going to be down to personal taste. But, yes I think so. the leads have some of the best on-screen chemistry i've ever seen. (including some truly great kiss scenes, I can't lie)
The drama is not perfect though. For example, the second leads romance feels skippable in places, But overall genuinely funny at times, full of heart, and worth it for LYX and Bai Lu.

It isn't that it's too early for one in general but there is a disconnect between what we are being told and what we are being shown. (This is in part a writing and direction issue) They have had instances that have lead to their interest, that pushed their relationship forward, but not enough for me to believe the level of their feelings right now. So personally, it doesn't feel natural.
This isn't the only issue I have with the progression of the story either, this is not limited to just their relationship. Trust me, this is really not how I want to feel at all. I'm actually feeling quite down about some of the disappointments I'm having, considering I was so excited for this. But I'm trying to look at the positive aspects.
I got to be honest, I don't really think this love confession felt earned. It didn't give me that pay-off feeling because there really hasn't been enough build up in their relationship. They were starting to like each other, but nothing that felt like love yet. (for either of them) Oh well...

I think they both have some problems to be honest. The writing and direction really isn't the best in either of them. But both have some positives too. So it's going to be a matter of personal taste. try both. Who knows, maybe you'll end up liking elements of both?

I think they're very professional, and are able to deliver enough on screen (they both are good onscreen kissers as we know, and from the footage we've already seen I don't think we'll be disappointed with the kisses themselves!)
