The thing is, it's a time travel melodrama. Think about it: if the timeline is changed, then it's normal that the ML doesn't remember. It never happened. It's... almost normal with time travel.
But there's the magic of a love story. Meaning that he might very well remember, like the FL in "Queen In Huyn's man", who remembered at the end despite the timeline.
The bad writing would be if... this whole story was in a fact a scenario the FL was writing and all of this never happened. A kind of "It was all a dream Dallas level" writing. I sure hope not.

I agree, the uncle tried to give the camera back, that was his goal but he died before he could do it. The angel of death was necessary since he was there in the beginning. The ML's ancestor stole a device from the world of the dead, after all. The curse is finally explained.
The ML died but was saved so we could say that the curse was over for him and maybe for his children. But the curse was transfered to the FL when he saved her life while he was in a coma/dead/dying? Since they were linked since they were kids, it makes sense.

So the FL can walk in this new timeline. No need for the ML to call her on the phone, he won't save her from her suicidal thoughts, she won't become his fan so she won't buy his watch at an auction.
Meaning that the ML still has his watch. If he has it, then either the FL manages to get her hands on it again (through a bet, for example?), or the ML keeps his watch and he is the one to time travel to save the FL if something bad happens to her in this new timeline.

So I assumed that she had won it at a fan auction. And that it was why she was upset when her grandmother was wearing it since it belonged to SJ. Who doesn't seem to wear it in the beginning of episode 1.

But if she never had that accident and never liked him in 2008, why would she have the watch in the future? Logic says that she doesn't have it and the ML still has his watch.

I feel like this is the second timeline: the FL is saved but whatever happened in the past, it's the ML's turn to have an accident (or something) and to forget about the FL (when in the first timeline, it was the FL who had forgotten about the ML being her neighbhor and in her high school and her savior).
Then he dies and the FL time travels for the 3rd and final time, saves him, he doesn't forget about her and they end up together.
I avoid those kinds of dramas. I aknowledge that some, like QOT are magnificent in all areas that matter, but I want to preserve my mental health. Real Life is hard enough for me, I don't watch to watch dramas which would make me even more depressed.
I think the genres are so different that QOT and LR aren't comparable. I would compare LR more with, let's say, "Queen In Huyn's man", which is a 2012 TT drama with the ML coming back and forth the past and the present.
