The messy story line aside and iffy acting aside, there are many production errors that you'd think they'd catch in the final editing and scenes that could have used some reshoots. That's what extra characters are for, like NPC's in a game. The writers will keep one or two, but the rest will likely be used to add to the chaos and loss.
Personally, I'd only have had an issue it they'd killed off the most important mains (like The Walking Dead did a few times, which took the show straight into the trash from S06 onward), but I think in SH, for the short time period and only 3 seasons total, they've made some good choices on who to keep. Well, maybe not Eun Yoo, I would have preferred Ji Su had survived, but Eun Yoo would make great fodder in S03.

It was more 'intense' because the presentation of Adachi didn't come across as someone developing a genuine emotional and sexual attraction to someone, it was more like learning to accept someone being attracted to him that way, and his feelings being more circumstantial, which creates a tenser atmosphere.

I don't know who said that. I never said you're not enjoying it, I said you might enjoy it more. Also the reality of the show is as fictional as the writer makes it, if they choose to write it without all the real-life issues you listed, then those issues don't exist in the story they're telling.

To me, in that scene, Tharn came across as dismissive while Phaya was almost losing his sh*t and the imbalance of emotional investment was concerning and questionable. Phaya is seemingly too deep in, where Tharn is not on the same page at all. At the time I thought it was possibly: 1. Tharn doesn't take Phaya's fears that seriously 2. He thinks Phaya's behaviour is erratic or over dramatic because he's been a bit ill tempered and hot headed in a few situations already 3. As he explained, he wants to keep Phaya close, but not too close because he has his own fears, so he's been stoic and a little cold whenever they interacted.
After the ep ended, I find myself hoping we see a turn around. Now that Tharn has dropped his guard, I hope to see him go all in emotionally, matching Phaya's intensity at least. I guess we'll see how the actor does from here on out and whether it's his acting or the character.

As for everything that came before my soul left my body: Despite the police work side of things still being iffy, the acting was upscaled in a big way in this ep and totally carried it home and then some. Really great performances all around. BIG emotions and well played out with the varying scenes of Art being thought guilty then revealed to not be guilty. Well done.
And then I lol'd and also experienced secondhand embarrassment when Phaya and the Doc were not so lowkey fighting over Tharn in front all the people in that meeting 😂 I'm thinking 'ermagahd stahp ya'll whaaaat' and Tharn's like 😓😓😓
And then they hit me with that shower scene and the touch of aggressive Phaya, then Tharn getting on his knees, then the hand in hair/ear kiss from behind? Ya'll. Visual aesthetic was over 9000. And then they killed me when they skipped to the scene after the shower, again aesthetics owned, very tasteful and sensual. KUDOOOOOS.

As mentioned already, I've also read the accents being one of the main issues in period dramas. And in some cases they'll offer certain actors the chance to do their own dubbing if their accents are neutral or suitable. Personally, I think the dubbing is a little annoying, but when compared to most English dubs, the voices are usually suitable and done well 😂 We can only hope that in future they'll dedicate more time to letting actors/actresses do their own voice overs, or just improve the quality of sound recording itself during production.
